Why does Smoked Tomato Bisque work with Chardonnay?
It’s a great rule of thumb to match intensity of the wine with the intensity of the food. Both the Smoked Tomato Bisque and the Chardonnay share a balance of smooth, delicate textures with a touch of complimentary creaminess.
Smoked Tomato Bisque
Ingredients
4 lbs ripe Tomatoes Smoked
4 celery sticks
4 carrots peeped
2 medium onions
1 cup white wine
2 cans of high-quality canned tomatoes
2 litres of vegetable or chicken stock
½ cup brown sugar
1 cups of heavy cream (optional)
Salt and pepper to taste
Instructions
Smoke Tomatoes (you can also smoke the carrots, celery and onions in with them if you like)
Sauté onions, carrots and celery until slightly soft.
Deglaze with white wine and let it reduce.
Add Smoked tomatoes and cans of tomatoes and stock and simmer for 2 hours.
Add brown sugar and season, finish with cream and blend.
You can use a sieve and strain out half to 3/4 of the solids for a bisque if you like or leave as is.
Season with salt and pepper to preference.
